Hi, I’m Gretchen Allen, I made a walk about wild edibles and show you where to find them on the VT campus. This recipe is something my mom used to make. And when I started making it myself, I had no idea what she called it. So I named it “stuff”. It’s my favorite side dish for quesadillas.
Garlic Onions Yellow squash Corn (canned or cut off cob) Tomatoes (diced) Cheese (I like cheddar!)
Amounts can vary a lot depending on how many you are feeding.
Sauté onion and garlic with a little bit of oil. Add squash until they start to get soft, dump in corn and tomatoes. Cover and simmer until squash is soft.
