Hi, a friend passed on this recipe to me. These are so easy to make, no baking required, and they are sooo good! You can change the flavour to your liking. Better than anything you can buy. And... a perfect little snack before a yoga session (and after). This recipe makes about 25 balls.
1 cup raw almonds
1 cup dried and shredded coconut (cover)
1/4 cup dried finely shredded unsweetened coconut (batter)
6 tbs raw agave nectar or raw warm honey
1/2 tsp allspice and/or 1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tbp cardamom
a pinch of salt
you can also add: vanilla, cacao powder or shredded chocolate, creamy nutpastes, nuts, dried fruit (finely chopped)
Add 1 cup shreddeed coconut to a big bowl for later.
Mix the other ingredients in another bowl or in the food processor. Keep the texture grainy.
Form bite-sized balls in your hands. Roll them in the bowl of coconut and cover nicely. Put them in the freezer form 15 minutes, then keep refridgerated.
